Hey folks, this is our very first post. Just wanted to say hello and welcome to Colin and Anne's foodie blog. We hope you will add your comments, restaurant reviews, recipes, or whatever else you like, and make this thing as much your own as it is ours.
Right now, Colin and I are planning a dinner party for his next visit in September. We're going to do a grazing menu, featuring lots of smaller dishes, rather than the traditional appetizer/main course/dessert arrangement most dinners follow. I want to make something involving corn pancakes, because of a wonderful dish I had at The Red Lentil restaurant in Watertown, but one of our guests has dietary restrictions, so I need to make it gluten-free and without cows' milk. Hmmm... I did some research online, checked out a bunch of recipes and, as usual, ended up creating a mash-up of my own invention. I'm going to top the pancakes with avocado, smoked salmon, a kind of crema made from goat milk yogurt, and a spicy, minced pepper-and-red-onion pico de gallo. I'll be testing the end result on my long-suffering husband tomorrow night, and will report back on the results. The photo shows the look I'm going for, though the recipe I found it with isn't actually very much like mine. Wish me luck!
